Cajun Chicken Protein Pasta

Ingredients:
-12 oz chopped rotisserie chicken (about 3 c)
-2 bell peppers sliced
-1 medium onion diced
-1 T cajun seasoning OR
-1 tsp paprika, 1/2 tsp italian seasoning, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp thyme, salt to taste and a pinch of ground red pepper.
-1 c cottage cheese
-1 c chicken bone broth
-1/2 c shredded parmesan cheese
-dried or fresh parsley for garnish
Boil noodles to al dente or however you prefer them. Set aside. Saute chicken, onion, peppers and seasonings until tender. Blend cottage cheese and broth until smooth. Add all ingredients together adding parmesan cheese last. Mix to combine and enjoy!
